I have been making smoked jerky for over 20 years now. About 10 years ago I started making smoked whitetail deer jerky for friends; I  just split the meat with them on the halves after it was smoked. They really loved it and wanted me to try other types of game animals.

 

I have smoked Elk, Aoudad Sheep, Black buck, Axis, and Beef (not that they are game animals). One day a friend brought me some feral hog meat to just see what it would taste like smoked and cured. It was great, better than any meat I had tasted and he thought the same. So, I started sharing some of my smoky goodness with other friends and everyone of them loved it and said I should sale it.

 

So here it is! I started up in January of 2013, got my tax ID, local business dba, etc. and started this business.
